I think it would definitely make you stand out! You could point out that you need to have some understanding of animal anatomy to do the job properly, and that it also shows that you have dedication and patience. I don’t believe it would count as animal experience, since I think that’s for live animals, but I would definitely list it as an interest/hobby on your application, and describe a few of the skills that it has taught you.
